Nor do I mean the environmental action group green peace.
Both of those are lovely things, but neither of them is what we’re here to talk about.
We’re here to talk about the awesome byproduct of eating lots and lots of asparagus.
Don’t sit over there and pretend that you don’t think that your first bathroom trip after consuming massive amounts of the green stalks isn’t highly entertaining.
You know you do.
I bet you even smile.
And hey, if you’re into that sort of thing, eating large quantities of B-vitamins will turn your urine neon yellow.
Its like a pot of gold at the end of the rainbow.
Ok, that might be taking it a little too far.
But if you’re having trouble getting your wee ones to eat their veggies, just tell ’em what it will do to their wee later.
Forget all that “Eat your veggies so you will grow big and strong” nonsense.
They ain’t buying it.
Kids want to see results.
And this way, they’ll see it before bedtime.
Unless they see it during bedtime, in which case, you might want to hold off on the organic, local asparagus and spend the money you saved on some pull-ups.

Fresh asparagus plus a few simple ingredients are all you need to make this flavorful soup that can be served hot or cold. A splash of non-dairy milk at the end of cooking gives it a silky smooth texture.
Creamy Asparagus Soup
2 teaspoons olive oil
1 large yellow onion, sliced
3 cloves garlic, chopped
2 lbs. of fresh asparagus, chopped
2 cups vegetable stock
1 cup fresh parsley, chopped
1/2 lemon, juiced
1/4 non-dairy milk or cream
salt + pepper, to taste
Add oil to medium-sized pot over medium heat. Add onion and garlic and cook until onion has softened (about 2-3 minutes).
Add broth and asparagus.
Cook with the lid on until asparagus is very tender. Stir in the parsley until it is wilted.
Transfer to blender or food processor.
Add lemon juice, salt, and pepper.
Puree until smooth.
Add non-dairy milk or cream and blend once more.
Serve warm or chilled.
