Bunny Bait

I think my Mom just learned how to text.

Before, she would call about once a week and fill me in on the family gossip.

Now she just texts me every day and fills me in on the HGTV programming schedule.

Last week I was elbow deep in dishwater when she sent me a text asking me about my weekend plans.

Even though I told her my weekend plans the day before.

So I sent her a short text.

She asked for more detail.

I elaborated.

I did not end my statement with an exclamation point.

Then she said I sounded sad.

I SOUND SAD?

I can’t sound like anything!

It’s text!

You’re reading to0 much into this.

Literally.

So now I make sure to end every sentence with a emoticons so she can accurately assess my mood.

Then she asked me if I was making fun of her.

No.

But I am now.

This all just confirms my belief that under-punctuating leads people to believe you suffer from mental health issues.

I’m not depressed.

I’m  busy plotting how to lure a certain bunny to my house next Sunday.

Perhaps homemade muffins will entice him to hop over for a visit?

These light and airy muffins are flavored with honey, orange juice, and orange zest for a sweet breakfast treat. They are made with whole wheat flour and applesauce to give you energy to hide all those Easter baskets!

HONEY MUFFINS

½ cup soymilk + 2 tablespoons ground flax seed

1 ¾ cup white whole wheat flour

1  tablespoon baking powder

½ teaspoon salt

½ cup honey

½ cup turbinado sugar

½ cup natural applesauce

¼ cup canola oil

1 orange, juice + zest

Pre-heat oven to 350 degrees

Combine soymilk and flaxseed and set aside to thicken.

Meanwhile, sift together dry ingredients in a large bowl.

In a large bowl, whisk together honey, sugar, applesauce, oil, orange juice, zest, and thickened soy milk.

Add dry ingredients to wet ingredients and  stir just to combine.

Fill lined muffin cups 2/3 full with batter.

Bake for 18-22 minutes or until toothpick inserted in center comes out clean.

Bunnies like their muffins schmeared with butter.
Bunny butter, that is.
If you like pumpkin or apple butter, you will love bunny butter! It’s made with carrots and sweetened naturally with pears and golden raisins. A pinch of ginger adds an extra pop of flavor. No bunny will be able to resist!

BUNNY BUTTER

1 lb. carrots

2 pears

1/2 cup golden raisins

1 tsp. ground ginger (optional)

Peel and chop carrots. Slice pears (leave the skin on for extra fiber!)

 Add all ingredients to a steamer basket.

 

Steam until carrots are super tender.

Puree.

Pour into small pot and add ginger.

Return to stove and simmer until mixture is reduced by half (about 45 minutes)

 When butter reaches desired thickness, remove from stove.

Cool completely.

Serve with honey muffins.

Pray that the Easter Bunny takes bribes.

In un-bunny related news, it’s April!

That means we’re onto the fourth month of the 12 challenges of 2012!

My goal this month is to get the garden ready for planting in May.

Why is this a challenge?

Because I’ve never done it by myself.

Hubs did all the hard work last year.

This month I plan to till the soil

Outline the beds

And spread the compost.

  1. Oh you are just so hardcore. If I could eat that bunny butter right now, I’d totally make some…but sadly, I’m currently not allowed to eat fruit or anything that comes from a can, among a long list of other things.

  2. I love the bunny butter and know that you will definitely have the bunny stopping by your house this year. Yummy cupcakes and that butter…a sure winner.
